The first step in making potato soup is meat. I used pork. If the meat was frozen, defrost it, wash it thoroughly and cut into small cubes (about 3 cm each).
We warm the pan well, add about 3 tablespoons of sunflower oil to its surface and spread the meat. Fry it over medium heat, stirring often, for about 3-5 minutes until lightly browned.
At the same time, prepare the onion. We clean the onion and finely chop it. Add to the meat when it has already become slightly ruddy. Fry the meat with onions for another 1-2 minutes, until the onions turn golden.
We fill the pan with 2 liters of water and transfer the meat to this water (along with the remnants of sunflower oil). Also add bay leaf to the pot of water.
We send the pan to the stove and cook the broth over low heat for 1 hour from the moment of boiling. At the same time, loosely cover the pan with a lid so that the broth does not evaporate.
We have an hour of time while the broth is being cooked. In the meantime, prepare carrots for potato soup with meat. For such soups, I prefer to cut the carrot into small cubes, you can also grate it on a coarse grater. Fry the carrots with the addition of a small amount of sunflower oil over medium heat until cooked (3-4 minutes), often stirring it with a spatula.
The broth was boiled for 1 hour, after that we can add the rest of the ingredients. We send the fried carrots to the pan with the broth and move on to the potatoes.
